If you are trying to lose weight but you are craving some pasta then I have a great solution for you. This recipe is for a wheat pasta dish. It is super healthy, loaded with tons of fresh veggies and very high in fiber. This meal will be sure to taste great and fill you up in a good way. It is also quick and easy to make. I call it Chicken Hash.

Chicken Hash with Wheat Pasta

1 – Boneless Skinless Chicken Breast

2 – Tablespoons of Olive Oil 1 Cup Fresh Cut broccoli

3 Tablespoons of Fresh Chopped Garlic

½ Yellow Onion Chopped

1 Cup Fresh Spinach

1 Can Diced Tomatoes (Italian Style)

2 Tablespoons of Fresh Parsley

½ Box of Wheat Pasta (your choice)

Cut chicken into 1 inch cubes, season chicken with some salt and pepper. Heat 1 tablespoon of olive oil in a pan. Add two tablespoons of fresh chopped garlic and the chicken. Cook chicken thoroughly. Add in broccoli, onion, remainder of garlic, and the can of diced tomatoes. Cover pan and let simmer for about 15 minutes. While this is simmering boil water and cook about ½ of the box of wheat pasta al’dente. (I typically like linguine but penne is also really good too). Once the pasta is cooked add it to the sauté pan with a little of the water from the pasta. Toss it all together and add in the spinach and parsley. Cook for about two minutes. Then serve.
